ROASTED BLUEBERRY SYRAH DESSERT SAUCE
This recipe was provided by Christine Taylor of farm-to-table restaurant, Outer Aisle in Murphys. It pairs perfectly with pastry chef Sierra Stange’s cheesecake, (recipe coming soon)!
2 cups fresh blueberries (in season)
2 tbsp sugar
3 tbsp Calaveras Syrah
1 tsp real vanilla extract
a pinch of kosher salt
Preheat oven to 400°F. In an oven-safe baking dish combine the blueberries, sugar, wine, vanilla and a pinch of kosher salt. Stir and then pop the blueberries into the preheated oven for 20 minutes. Pull them out halfway and give them a careful stir. Once the twenty minutes are up, remove and smash the berries with a spoon.
Let cool a tad before pouring over cheesecake (pictured), pancakes or your favorite ice cream.
