Chardonnay Recipe
DUNGENESS CRAB MACARONI & CHEESE
INGREDIENTS
1 tbsp olive oil
1 minced garlic clove
1/4 cup Calaveras Chardonnay
1 pint heavy cream
pinch white pepper
1/2 cup shredded white cheddar
1/2 cup shredded Parmesan cheese
l lb Dungeness crab meat
1/2 cup chopped scallions
1 cup breadcrumbs
5 cups cooked pasta
salt and white pepper
DIRECTIONS
Preheat oven to 400°F. Heat the oil in a saucepan and sauté the garlic until fragrant but not browned. Add the wine and cook until its volume is reduced by half. Add the cream and pepper and bring to a boil. Cook the sauce until it is slightly reduced and thick, add half of the cheddar and Parmesan and stir until cheese is melted. Add the crab meat, scallions and cooked pasta and mix gently. Pour the pasta into a buttered oven proof casserole dish and top with the remaining cheeses and bread crumbs. Bake uncovered until top is golden brown and bubbly

CHARDONNAY TASTING NOTES
Chardonnay is a very full-bodied white which when aged in stainless steel produces flavors of apple, pear and plum. When aged in oak, the barrels bring forward buttery and nutty components like hazelnut. Chardonnays are always wonderful paired with cheeses.
